Slow Cooker Beef Nilaga (Boiled Beef Stew)

What you'll need

Crockpot (slow cooker)
Measuring cups
Sharp knife
Measuring spoons
Cutting board

Ingredients

Serves 8
2 pounds Beef Brisket cut into 2" cubes
2 Potatoes large, cubed
1 Onion large, diced
5 Carrots medium, chopped
4 cups Broth beef or vegetable or Water
2 cups Water
1 tablespoon Fish Sauce
1 tablespoon Peppercorns whole
1 bunch Bok Choy sliced

Directions

1.

Layer beef, potatoes, onions, and carrots into slow cooker.

2.

Sprinkle with peppercorns. Pour in broth, water, and fish sauce. (Add additional water or broth so ingredients are fully covered.)

3.

Cook on high setting for 8 hours or until beef comes apart easily with a fork.

4.

During the last 15 minutes, add bok choy.

  • Top with fresh cilantro or parsley.
