1 Eggplants about 1/2 pound
3 tablespoons Oil
2 tablespoons Soy Sauce low-sodium

Directions

1.Cut the eggplant into 1-inch cubes.
2.Place on a microwave-safe plate.
3.Sprinkle with oil and soy sauce.
4.Microwave on high for 4 minutes, turning once.
